Peppermint Cookies n’ Cream Brownies
Fudgy. Rich. Intense. Chocolaty. Pepperminty. Amazing.
All of these words are ones that I would use to describe these Peppermint Cookies n’ Cream Brownies, which just might be my favorite brownies to date. The response to them in general (as soon as my unofficial tasters no longer had their mouths stuffed full of brownie) was “oh my god.” They had a fantastic balance between being fudgy and chewy. Leafy greens like Collard Greens are in season and super cheap. For 1 lb at my local grocery store, they are only $1! I decided to buy a bunch and see what I could whip up. Quick And Tasty Lemon Pasta Recipe
This lemon pasta recipe is quick and delicious.
Light and low in calories (an average serving is about 350 calories), this dish is very satisfying and makes a great informal supper for two people.
Ingredients:
160g/6oz pasta (I like to use rigatoni or tagliatelle)
1 tablespoon of olive oil
2 cloves of garlic, crushed
2 teaspoons of grated lemon zest
60g/2oz/4 tablespoons of low fat cream cheese (soft cheese)
50g/2oz/2 cups of rocket (arugula)
Salt and freshly ground black

Ingredients:
1 1/2 tsp butter or margarine
110 g white marshmallows
90 g Kelloggs Rice Krispies or Ricicles
50 g desiccated coconut
dried cranberries, currants or blueberries for eyes and mouth
How To Make:
1. In a saucepan, melt butter or margarine over low heat.
2. Add marshmallows, stirring until melted. Remove from heat.

4. while still warm, using wet hands, shape as desired, then roll into coconut.

1/4 cup dark rum

3. Add bananas and cook until caramelized on both sides.
4. Remove the pan from the heat, add rum, and then return the pan to the fire.

Fruit desserts such as this are very easily digested, as citrus combines well with nuts. This is also a very simple dish, using only three ingredients, which also makes it easier on your digestion.

10x oranges
10x brazil nuts
1x tsp cacao powder
Method:
Peel and slice 8 of the oranges into half moon shapes and layer in a pie tray. Blend the remaining 2 peeled oranges with 8 brazil nuts and a teaspoon of cacao powder.
Pour this custard over the oranges in the pie

This raw food recipe was a smashing success when I made it for a dinner party.
It is so delicious that I am pretty sure it beats any other cheesecake I've ever tasted (and I used to taste cheesecakes a LOT!).
While it is certainly WAY healthier than the dairy and refined sugar laden standard version of cheesecake, this is still something to be eaten in moderation and on the very odd occasion, as it is fat laden to the EXTREME.
Ingredients: Crust
2 cups of macadamia nuts
Half a cup

I first discovered Sesame Chicken when I was eating at a Chinese buffet. The juicy chicken and the amazing sauce had me hooked from the first bite. I knew right then that I had to make this at home and after trying a couple different recipes, I came up with one that I enjoyed the most. Smoke Cajun Creole Chicken and Rice
1 cup of Long Grain White Rice
1/15 oz Can Red Beans
4-5 Boneless, Skinless Chicken Breasts or Cut of Choice
½ lbs Sausage (Andouille or Smoked)
Smoked Cajun Creole Seasoning
Oil
Pound chicken meat flat and season both sides with the Cajun Creole Seasoning and place in the refrigerator for 10 minutes.
During this time, place 1 C of rice and 4 cups of water in pot with lid and bring to a boil, turn down to simmer.
Layer 1 can of Beans with liquid, 1 TBS of Seasoning, and
