Prawn Thai Salad with a Red Nam Jim

Ingredients

Prawns
500ml fish stock
6 green king prawns, peeled, deveined, butterflied, heads and tails intact

Red Nam Jim
2 cloves garlic, peeled
10g fresh ginger, peeled, chopped
1 long red chilli, deseeded, finely chopped
½ bunch coriander, leaves and roots
1 ½ tablespoons palm sugar, chopped
4 limes, juiced and strained for pips
10ml fish sauce

Salad
½ bunch mint
½ bunch Thai basil
½ bunch Vietnamese mint
4 lychees, quartered
20g peanuts, crushed
